Watermelon gazpacho

Ingredients:

  • 3 cups of watermelon cut into cubes
  • 1 1/2 cup of tomato
  • 1 cucumber, cut
  • 1/2 red pepper, cut
  • 2 tablespoons of red onions
  • 1 minced garlic clove
  • 2 tablespoons of olive oil
  • 1 teaspoon of red wine vinegar
  • 2 tablespoons of lemon juice
  • Salt and pepper

Preparation:

  1. Blend all ingredients in a food processor until smooth.
  2. Season with salt and pepper to taste.
  3. Chill lightly and server

Add a few shavings of Basil Food Crayon and enjoy!
