Maple Scallop Mango Salad

Ingredient for 2 people

For the mango salad :

  • 1 green mango julienned
  • 1/2 cucumber or 2 little Lebanese cucumber julienned
  • 1 avocado cubed 
  • 2 minced green onions
  • The juice of one lime
  • 1 tablespoon of maple syrup

For the scallops :  

  • 8 to 12 scallops
  • Marinade to steep the scallops before cooking (leave 10 minutes)
    • 4 tablespoon of maple syrup
    • 2 tablespoon of rice vinegar
    • 2 tablespoon of gluten free tamari sauce (an other soya sauce works to)
    • 1/2 teaspoon of fresh ginger grated
    • 4 tablespoon of vegetable oil (olive for example)

Preparation

  1. Prepare the marinade for the scallops and refrigerate (10 minutes)
  2. Mix all ingredients of the mango salad and refrigerate
  3. Fry the scallops 2 at 3 minutes per side on a hot oiled frying pan
  4. Serve on a plate with the scallops on top.
